Fill the glass with fresh ice. Blend watermelon chunks and strain to get 100ml of smooth juice. In a cocktail shaker or lidded jar, combine the watermelon juice, tequila, Cointreau, lime juice, agave syrup, and a handful of ice. Shake well for 20–30 seconds until chilled. Strain into a glass then using a microplane or grater, shave the frozen watermelon chunks and pile them on top of the margarita like a frozen cap.
