When you can’t go to Hawaii.. you have no option but to bring Hawaii to you! 🐟☀️ These poke bowls are an all time favourite of mine. They’re light, refreshing and perfect for this warmer weather! Make sure you save for later & comment below your favourite toppings!! For the poke: 300g sashimi-grade ahi tuna, diced into cubes 1½ tbsp soy sauce 1 tsp yuzu juice ½ tsp rice wine vinegar 1 tsp sesame oil ½ tsp flaky sea salt 2 spring onions, finely sliced ½ tsp grated fresh ginger 1 tsp toasted sesame seeds A pinch of red chilli flakes or finely chopped red chilli 1 spring onion, thinly sliced Toppings: ½ ripe avocado, sliced or cubed ½ ripe mango, diced A few sprigs fresh coriander (roughly chopped) ¼ cucumber, finely sliced Crispy fried onions (store-bought or homemade) Optional: sprinkle of furikake or nori strips for extra umami Method: Cook your sushi rice according to the instructions on the packet, then set aside. In a bowl, mix soy sauce, yuzu juice, rice vinegar, sesame oil, salt, spring onions, ginger, sesame seeds, and chilli. Add the diced tuna and toss gently. Chill for 10–15 minutes. Assemble your bowls with rice, tuna, avocado, mango, cucumber, coriander, and crispy onions. Sprinkle with furikake or nori if you like, and serve immediately.

Burger buns— I’ve finally perfected my burger buns recipes and I’m so excited to share it!!! This recipe is soft, light & way better than shop bought. It’s such a great way to take your barbecue up a notch!!! Make sure you save this recipe for later!! 🍔 Ingredients: 500g strong white bread flour 10g fine sea salt 25g caster sugar 7g instant yeast 1 large egg 240ml whole milk (lukewarm) 60ml water 50g unsalted butter (softened) For topping: 1 egg (for egg wash) Sesame seeds (optional) Instructions: 1. In a stand mixer, combine the flour, salt, sugar, and yeast (keep the salt and yeast on opposite sides of the bowl). Add the egg, warm milk, and water. Mix on medium speed for about 8 minutes. 2. Add the softened butter in small pieces and continue kneading for another 8 to 10 minutes until the dough is smooth, elastic, and slightly tacky. 3. Shape the dough into a ball and place it in a lightly oiled bowl. Cover and let it rise at room temperature for 1 to 1.5 hours, until doubled in size. If it’s a really hot day— just do 1 hour! 4. Turn the dough out onto a surface and divide it into 8 equal pieces (or 10 if you want them slightly smaller). Shape each one into a smooth ball and gently flatten it. Arrange them on a parchment-lined tray with some space between. 5. Cover loosely with cling film or a damp tea towel and let rise again for about 1 hour, until puffy. 6. Preheat the oven to 190°C fan (210°C conventional). Brush the tops of the buns with beaten egg and sprinkle with sesame seeds if using. Bake for 15 to 18 minutes, until golden brown and shiny. 7. Cool the buns on a wire rack for at least 30 minutes. Slice and toast before serving for the best texture.
