Add into a hot pan and sear it to get a nice crust, and baste with oil. - Add to an oven at 200F until internal temp reaches 135F or to your liking - In the meantime, make your l sauce by combining all the ingredients under βsauceβin a saucepan. Bring the mixture to a simmer and reduce until slightly thick before removing from heat and straining the liquid. - Make the sushi rice and add it into a hangiri or a decent-sized bowl, then add some sushi vinegar and mix - Serve everything in a bowl with the sushi rice, add the sauce, and top with ikura and your cured egg yolks.
