Banana Balls 🍌 I don’t know what else to call this but it could be a variation of “maruya” a filipino banana fritter. I just know they sold this at our school cafeteria before and I really loved it! INGREDIENTS: Wet Batter: - 8 ripe bananas, mashed - 2 egg - ½ cup evaporated milk or water - 1 tsp vanilla extract (optional) - 1 tbsp vanilla extract - 1 tsp banana extract - ½ tsp salt Dry Batter: - 2 cup plain flour - ½ cup cornstarch - 4 tbsp sugar (adjust to taste) - 2 tsp baking powder Others: - Oil for frying - Coating: powdered milk INSTRUCTIONS: - In a mixing bowl, mash the bananas until mostly smooth—some small chunks are perfectly fine. Add all the ingredients listed under “Wet Batter” to the mashed bananas. Whisk until well combined. - In a separate bowl, whisk together all the “Dry Batter” ingredients. - Pour the wet mixture into the dry ingredients. Gently fold and whisk until combined. Using an ice cream scooper or by hand, form the batter into balls. - Carefully drop the balls into hot oil at 165°C.
