π΅π Arroz Caldo | Soups So Good It Can Cure Any Sickness Ep. 11 INGREDIENTS: Arroz Caldo: - 1kg bone-in chicken thighs - 1 cup glutinous rice (malagkit) - 1 cup regular white rice - 1 onion, chopped - 10-12 garlic cloves, minced - 1 whole ginger, julienned - Chicken oil (optional) - 6-8 cups chicken stock (or until pot is filled) - 2 tbsp fish sauce (or to taste) - Salt and pepper, to taste - 1 tbsp of kasubha Toppings: - Hard-boiled eggs - Fried garlic bits - Spring onions INSTRUCTIONS: - Start by searing your chicken thighs in neutral oil (or in this case we used chicken oil) for about 3-5 minutes on each side. Remove chicken and place on a wire rack. Set aside for later. - In the same pan or pot add your chopped onions, garlic and ginger and saute using the excess oil until softened and fragrant. - Add your rice and chicken stock and mix. Add back your chicken thighs and season with fish sauce, kasubha, and pepper.
