Red Thai Chicken Coconut Soup Recipe. INGREDIENTS: 3 Tablespoons of Red Thai Curry Paste 2 Chicken Breasts (or any chicken) 1 Can of Coconut Milk (400ml) 1 Teaspoon of Turmeric Powder 1 Teaspoon of Soy Sauce 1 Teaspoon of Fish Sauce 300ml of Chicken Stock/Bullion 1 Tablespoon of Sugar 1 Nest of Noodles (or however much you like) COOKING INSTRUCTIONS. Put the red thai curry paste in a preheated pot and cook for about a minute or until you see the oil separate. Put in your cut up chicken and mix in the paste, cook for a couple of minutes (not cooking the chicken at this point just infusing with the paste, chicken will cook in the broth). Add in your coconut milk, turmeric, soy sauce, fish sauce and chicken stock/bullion. Bring the broth to a boil then reduce it down to a simmer. Place lid and let the broth cook for about 40 minutes or until chicken is cooked through. Near the end of the broths cooking, start boiling up your noodles. Place drained portion of noodles in a bowl and then pour your soup broth into the bowl. Add in any garnishes that you want (I used chilli crisp). Bowl up and enjoy !
