how to make fresh pasta! this is something I do almost every week cooking for all of the friends I invite to my apartment so I figured it was time to do a video hahaha. I love how much freedom of choice you have starting from a sheet of dough and there are so many amazing shapes or styles of pasta you are able to make starting from dough. the steps are relatively simple from starting with a well of flour (i recommend using 00’ flour but it isn’t 100% necessary). then adding your dough ingredients which can vary greatly on what type of pasta you are making, I used around 3 eggs for every 240g of pasta but the ratio varies heavily, you should air on the side of too moist and add flour accordingly! kneading is one of the most important parts I see done wrong so really make sure you put in the work to get your dough nice and smooth and bouncy. sheeting is the most fun part for me, you could do this by hand with a rolling pin but the machine makes it way easier and more manageable. laminating really adds that additional bite to the final product and once you have everything sheeted you can basically learn how to make any pasta shape that you prefer.
