fluted mushrooms! we are serving these on our holiday menu at my restaurant and I had never done them before so I figured I would try it out and share how to do it with all of you. I am no expert at fluting mushrooms, but it really is just a practice makes perfect skill. Although, ultimately not very useful for casual cooking, it is a demonstration of time and effort put into every detail that maybe the people you are serving will appreciate. I always have a lot of fun learning techniques like these, because they are so specific but extremely satisfying once you figure it out. a little late night/early morning cooking that I thought might be fun to share. i had this unbelievable piece of grouper in my fridge because one of our purveyors had insisted we try it just as a sample. I decided to keep it simple and bright with a allium and citrus forward pan sauce infused with miso I got from a store in brooklyn, and a ton of smaller light garden herbs I had that I thought would all pair well together. that alongside some of my chili oil and this was a super fun dish to make. if I could change the result, I would have strained the pan sauce before serving, and balance the entire dish with more umami since it was pretty punchy. i just had my practical exam the other day and here is my chef grading my food and everything i was thinking about during it! we made a pan seared new york strip steak with glazed baby carrots, pommes persillade and a red wine pan sauce. i felt really good about the food i put on the plate and i thought all the tastes were good so i was feeling not too bad when i presented my plate. my chef gave me a bunch of critique and i was worried i hadn’t done well, but i ended up getting a 96. honestly i was a bit confused and i asked my chef how i got a 96 since i was thinking i would have done worse and he said he was just extra critical because it was the end of the module and he just wanted to remind me to keep on improving since we should strive to get better and better and be as perfect as possible with all of our components for each dish. i am so grateful to him as my chef for this module and i am grateful for everything i have learned and will continue to keep on working as hard as i can and i hope you all enjoy the journey :D #fyp #culinary #culinaryarts #culinaryschool #culinarystudent #culinaryexperience #chef #food #cook #cooking #grade #review #test #exam #pressure #nervous #teacher #student #pov #thoughts #FoodTok #cooktok

Home Made Chilli Oil is super easy & better than supermarket stuff! I learnt from @StevenMotoCooks & I def recommend you following him! RECIPE: ¾ cup chilli flakes 1 tbsp chilli powder 5g Dried crushed chillies (optional) ¼ C sugar 1 tsp salt 1.5 tbsp vinegar (black vinegar preferred) ½ C soy sauce AROMATICS: 4 Cups of oil (canola/vegetable) 2 shallots (100g) 1 large bulb of garlic (70g) Ginger (50g ) 1 & a half cinnamon sticks 2 star anise -In a large heat proof bowl combine spice mix ingredients, stir together and set aside -Finely dice shallots, garlic & ginger -Add to a small pot and cover with 4 cups of oil. Do not use low smoke point oils like olive oil etc lol -Bring it to a boil, then turn down to a low simmer & add cinnamon sticks star anise. -Simmer for about 30 mins untill the aromatics turn a nice darkish golden brown colour - stirring occasionally. -Pour that hot oil over your chilli mix that we made earlier, leave it in the fridge overnight and then it's ready #ChilliOil #HomeMadeChilliOil
Grosse opération de la FCC : quatre suspects interpellés Steven Mootoocurpen fait partie des quatre suspects interpellés ce matin par la Financial Crimes Commission (FCC). Deux autres individus résident respectivement au Morne et à Camp-Levieux, Rose-Hill. Ils ont été arrêtés dans le cadre d’une vaste opération menée par le National Coordination Committee. Cette opération conjointe a mobilisé la FCC, la police, la Mauritius Revenue Authority (MRA), le bureau du Directeur des Poursuites Publiques (DPP), ainsi que d’autres instances. Les perquisitions ont eu lieu à Camp-Levieux, Rose-Hill, Le Morne, Moka et dans plusieurs autres régions. L’opération est liée à des soupçons de trafic de drogue et de blanchiment d’argent. Outre des 4x4, voitures et motos — plus d’une quinzaine au total — plusieurs voitures de collection ont également été saisies. À ce stade, la quantité exacte de drogue ainsi que le nombre précis de véhicules confisqués n’ont pas encore été communiqués par les autorités.
