Crispy Fried Chicken Wings with Laab dressing Laab is one of my favorite Lao dishes! It’s a minced meat salad tossed with a ton of fresh herbs & spices. It’s citrusy, spicy with a ton of umami from the fish sauce, padeak, & tamarind. INGREDIENTS FOR FRIED CHICKEN - 6pcs of chicken wings - Frying oil - 1 tbsp of granulated chicken bouillon - 2 tsp of sugar - 2 tsp of MSG - 2 tsp of black pepper - 1/2 cup of cornstarch - 1/2 cup of rice flour INSTRUCTIONS 1. Marinade the wings with the seasonings listed & marinade for 1hr 2. Bring the frying oil to high heat or at 375 degrees 3. Add flour to the marinaded chicken wings then transfer to the fryer 4. Fry for 15mins, strain and set aside INGREDIENTS FOR LAAB DRESSING: - 2 tbsp of tamarind extract - 1 tbsp of fish sauce - 2 tsp of fermented fish paste - 1.5 tsp of msg - 1 tbsp of garlic - 2 tsp of crushed chili flakes - 1 whole lime (squeezed) *Combine all ingredients and set aside ADDITIONAL INGREDIENTS - 1 cup of roughly chopped mint - 1/2 cup of roughly chopped cilantro - 1 stock of chopped green onions - 1 small knob of sliced shallots - Chopped Thai chili peppers as desired - 2 tbsp of roasted rice powder INSTRUCTIONS: 1.
