For the sponge: 180g butter, softened, plus more for the tin 180g caster sugar 3 eggs 180g self-raising flour 50ml milk 2 teaspoons vanilla extract For the topping: 250g raspberry jam 25g desiccated coconut 1. Preheat the oven to 180°C fan. Butter a square 20cm baking tin and line it with baking paper. 2. Put the butter and sugar in a large mixing bowl and use electric beaters to beat until light and creamy. Add the eggs, flour, milk and vanilla extract. Beat until it’s well combined. 3. Pour the batter into your prepared tin and spread it evenly into the edges. Bake it for 25 minutes. To check it is cooked, poke a skewer into the middle and it should come out clean. If the skewer comes out with wet batter on it, get the cake back into the oven for a few minutes before testing again. 4. Once cooked, take it out and leave it to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely (see the hack in the recipe introduction). 5. Once the cake is completely cool, spread over the jam, then sprinkle evenly with the coconut. Cut it into portions and it’s ready to enjoy. Speedy Comfort is available to buy now!
