Thai Style Chicken Satay 😍   Here’s what you’ll need:   150g Smooth peanut butter 100g Thai red curry paste 2 tbsp Soy sauce 400ml Coconut milk 500g Chicken thigh fillets 10g Parsley, chopped Here’s how to make it:   1.     In a large bowl, add the peanut butter, Thai red curry paste, soy sauce, and 50ml of the coconut milk. Beat until smooth. 2.     Transfer two thirds of it into a saucepan, add the remaining coconut milk and mix well. 3.     Cut the chicken into bite sized pieces, then add it into the bowl of the remaining marinade and mix until it’s completely coated. 4.     Thread the marinated chicken onto 4 skewers. 5.     Heat some oil in a large pan, cook the chicken over a medium heat until they are golden brown all over and cooked through. 6.     Heat up the sauce, taste for seasoning, then add the chopped parsley and stir well. 7.     Plate up the chicken skewers with rice, then pour over the satay sauce. Lighter ‘Marry Me Chicken 😍 This is the lighter version of the viral marry me chicken. Cajun Sausage & Prawn Pasta 😍 This is my version of a pasta I had at Lainey Wilson’s bar in Nashville on a recent visit! ☺️ Here’s what you need to make it 👇 200g penne pasta
2 good-quality sausages, sliced
1 red pepper, diced
2 tbsp Cajun spice
2 garlic cloves, minced 150g raw king prawns
1 tbsp tomato paste
200ml chicken stock
150ml double cream
40g parmesan, grated + extra for serving

Creamy Garlic & Paprika Chicken 😍 Full recipe 👇 80 g Plain flour 2 tbsp Paprika 1/2 tsp Salt 1/2 tsp Black Pepper 2 Chicken breasts 4 Cloves of garlic, chopped 150 ml Chicken stock 150 ml Double cream 15 g Parsley, chopped Here’s how to make it: 1. In a bowl, add the flour, half of the paprika, salt and pepper. Mix well. 2. Slice the chicken in half lengthways to give 4 thinner fillets. Coat each piece in the seasoned flour. 3. Heat some cooking oil in a large frying pan, then cook the chicken over a medium to high heat until they are golden all over. This should take 3-4 minutes on each side. 4. Remove the chicken from the pan, then add the garlic and cook for 30 seconds. Pour in the chicken stock, double cream and remaining paprika. 5. Get the chicken back into the pan, stir to coat, then bring to the boil and cook until it’s thick and creamy. 6. Sprinkle in the parsley and taste for seasoning, then dish it up. This goes well with pasta, rice, or potatoes. I went for some baby hasselback potatoes with broccoli. Have a go at this one and let me know how you get on! 🩵💛
