Homemade Sourdough Crumpets ⬇️ Unless you’re making sourdough bread every day, your sourdough starter can get quite full… so it’s great to have other ways to use it up! This is one of my favourite recipes for doing that - very quick and simple but makes the most comforting breakfast when you don’t have hours to commit to a full loaf 😅 150g sourdough starter 100g plain flour 1/2 tsp bicarb soda / or 1 heaped tsp baking powder 1/4 tsp salt Juice of half a lemon 200ml water 1 tablespoon olive oil Combine the starter, flour, bicarbonate or baking powder, salt and lemon in a bowl and mix together. Add the water to loosen and whisk until you have a smooth runny batter. If it’s too thick, just add extra water. Grease your metal crumpet rings with butter (you can use any round metal cutter for this - scone cutters will work too). Place a frying pan over medium heat. Once hot, add the oil then place the crumpet rings in the base of the pan. Pour the batter in to each crumpet ring until it reaches one third of the way up the ring (or up half way up if you want large crumpets) and leave to cook. You should see bubbles slowly start to form. Once the surface looks dry and set and the crumpets are bubbly, remove the crumpet rings very carefully leaving the crumpets in the pan, then flip them over to briefly cook the topside for 2 minutes.
