Hi from the #CorrugatedMilkcap #Lactifluuscorrugis and the #VoluminousMilkcap #Lactifluusvolemus, these are “milkcap” mushrooms that exude smelly, sticky white latex that stains brown as it dries out. These are mycorrhizal mushrooms that fruit during the summer months across much of the eastern and southern US usually in association with hardwood trees, like beech and oak. The corrugated milk cap tends to be a darker brown to purple shade while the voluminous milk cap is lighter brown and copper. Both of these are excellent edible mushrooms when cooked. . I typically like to boil these in a flavorful broth and then pickle them for storage in the fridge. They are also excellent when roasted, which helps to condense their texture and make them more meaty. It’s not necessary to “milk” them but I do find that helps keep my cutting board from getting all sticky later on. .
