Shrimp Boil (Serves 4) Spice Mix 2 tsp lemon pepper 2 tsp paprika (regular or smoked) 2 tsps brown sugar 2 tbsp Cajun seasoning 1 tbsp Creole seasoning 1 tsp garlic powder 1 tsp onion powder 1 tsp black pepper 1 tsp red chili flakes For the boil: 1 lb shrimp (shell-on and deveined) 1 lb baby potatoes 1 package Garden Foods Mini Corn on the Cob 4 large eggs (optional) 1.5 tbsp of the spice mix 2 cloves garlic, crushed 1 small onion, halved 2 bay leaves 1/2 a lemon Salt to taste For the pan sauce & sausage: 1 smoked sausage, sliced 1 block President unsalted butter 1 head garlic, peeled and minced ½ onion, finely chopped Remaining spice mix Juice of 1 lemon Handful fresh parsley, chopped Directions: - In a large pot, add water, 1.5 tbsp of the spice mix, crushed garlic, halved onion, bay leaves, and lemon. Salt generously and bring to a boil. - Add baby potatoes and boil for 10–12 minutes until nearly fork-tender. - Add frozen corn and boil for another 5–6 minutes. - Add shrimp last and boil for 2–3 minutes until pink and cooked through. Drain everything and set aside. - While the boil is cooking, heat a large frying pan over medium heat. Add the sliced sausage and cook until browned. Remove and set aside, leaving the drippings in the pan. - In the same pan, add butter, then sauté the minced garlic and chopped onion until fragrant and softened (about 2–3 minutes). Add the remaining spice mix, stir, then finish with lemon juice and chopped parsley. - Return the sausage to the pan, then add in the drained shrimp, corn, and potatoes.
