FRIDGE FREESTYLN’ EP.26 @Vic THE DISH: Seaweed Cured Salmon Chai Spiced Onion Jam Rice Wine Corn Puree Crispy Chicken Skin PRIMARY INSPO -Victoria has a love for aesthetics, so for me the biggest inspiration was to make sure the dish was extremely beautiful -She is Chinese but loves all kinds of Asian food so it was important for me to try to incorporate a few Asian cultures; I did Chinese, Japanese and Indian. SECONDARY INSPO -Aside from her “what do you want to eat before dying” series; she is also known as the Noodle Queen where she hosts an interactive noodle Omakase called “Noodle Lab”. In addition to that she also is launching her own noodle brand called YANG. I took this inspiration and wanted to showcase elements in the dish where it gets inspiration from noodles; in this case, I cut and presented the salmon like wavy noodles and also overall incorporated ingredients and flavors that you could find in a bowl of noodles: umami base, seaweed, soy sauce, chilli oil, fresh herbs, raw onions, crispy toppings. All of these are shown in this dish. -Victoria actually cooks a lot at home especially for her husband. She at the time just made a big pot of chicken and mushroom soup as well as own chilli oil. I wanted to use these in the dish to make it even more personal and to show how it can used in other ways.
