Cajun Garlic Butter Chicken, Sausage & Potato Rice Skillet Ingredients: 1/2 lb boneless chicken thighs or breasts, cut into chunks 1/2 lb smoked sausage, sliced 2 medium potatoes, diced small 2 tbsp butter 1 tbsp olive oil 1 tbsp Cajun seasoning (plus more to taste) 4 cloves garlic, minced 1 cup uncooked white rice 2 1/4 cups chicken broth 1/2 cup grated Parmesan cheese Optional: chopped green onions, parsley, or hot sauce for garnish Instructions: In a large skillet, heat olive oil over medium-high heat. Add potatoes and cook 8–10 minutes, stirring occasionally, until golden and tender. Remove and set aside. In the same skillet, melt butter. Add sausage slices and cook until browned. Add chicken, season with Cajun seasoning, and cook until chicken is done. Remove both and set aside. Add garlic to the pan, stir for 30 seconds. Stir in rice and toast for 1 minute. Pour in chicken broth, bring to a boil. Reduce heat, cover, and simmer for 18–20 minutes until rice is tender. Stir in Parmesan cheese, then return the sausage, chicken, and potatoes to the pan. Mix well and heat through. Taste and season with more Cajun spice if needed.
