I figured the mukbangs didn’t feature those regular fritters ifykwim but rather leftover donuts doughs turned into these crispy yet fluffy donuts embellished with apple bits and a generous icing glaze. They were gone within minutes haha my family loved them a lot! The recipe is adapted from CozyPlum! these makes 6 large ones but you can downsize it into 12 doughs! ingredients 📝 [Donut Dough] 1/2 cup warm milk 50g granulated sugar 50g 85g unsalted butter melted 1 egg + 1 egg yolk room temperature 1 1/2 tsp instant yeast 210g plain flour 210g bread flour 1/2 teaspoon kosher salt [Apple Filling] 450g (about 3) Fuji apples 67g light brown sugar 1/2 tbsp ground cinnamon 1 tbsp cornstarch 1/4 cup apple cider vinegar/apple juice! 1 tsp vanilla extract [Icing Glaze] 300g icing sugar 50ml milk 1 tsp vanilla extract Process 🥘🔪 [Donut Dough] (1) in a stand mixer bowl, combine milk, sugar, butter and eggs. (2) add instant yeast, both plain and bread flours (set aside 1/2 cup worth of flour) and mix on low until combined. Do scrape down the sides to incorporate the rest of the flour, then mix on medium high speed for five minutes. (3) add remaining ½ cup flour and salt and mix on low until incorporated, then increase to medium high and mix for one more minute. (4) transfer dough to a greased bowl and set aside for 1 1/2 hour. (5) punch out the air, roll into a rectangle on a floured surface. [Apple filling] *can be done while the dough rises. (1) peel and dice the apples. Combine with brown sugar and cinnamon. Cook over medium heat for about 5 minutes until the sugar melts and the apples begin to soften slightly. (2) mix together the cornstarch and apple cider and stir it into the apples until it thickens. Remove from heat and stir in the vanilla and set aside to allow it to cool completely. [Assembly] *Best to drain out excess apple fillings to avoid a goopy mess. (1) add cooled apple fillings and spread it evenly across the bottom half of the dough. Sprinkle extra flour on top of the apple filling. (2) fold top half of the dough on top of the filling. Cut into strips and across. (3) top with even more flour and use a bench scraper to remould and compact it into a dough (4) using a dough cutting ring, cut out into 6 large donuts. (5) transfer the apple fritters to a baking sheet and allow it to proof for another 1 hour. [Frying] Fry the fritter for about 3 minutes flipping halfway at 170C. Repeat with the remaining donuts. [Glaze] (1) whisk together the powdered sugar, milk and vanilla. (2) dunk the fried donuts into the glaze and turn it to coat completely, place onto a wire rack and allow the glaze to set, then enjoy!
