“ARROZ DE CAMARÃO” If @Coco Da Fonseca asks me to cook it’s generally something Portuguese and this particular dish is so easy to make and packed with mad flavor. Also if you doubt this recipe … it’s mom approved so ya … trust me ok. Easy Arroz de Camarão (Portuguese-Style Seafood Rice) What we used 1 packet @Knorrflavour Minestrone Soup 300–400g raw prawns (peeled, tails on for drama) 1 cup long-grain or parboiled rice 1/2 onion, finely chopped 1/2 red pepper, diced 2 cloves garlic, minced 2 tbsp olive oil 1/2 tsp paprika 1/2 tsp chilli flakes 1 tbsp tomato paste 1 fish stock cube, to enhance the seafood flavour - Any fish stock will work, we got ours from @sevenseasfisheries. 4 cups water (to cook rice + dissolve soup) Juice of 1/2 lemon Fresh parsley or coriander, chopped Salt + pepper to taste ⸻ What we did In a wide pan or pot, heat olive oil and sauté onions, red pepper, and garlic until soft. Add paprika, optional chilli flakes, and tomato paste. Cook for 1–2 mins to deepen the flavour. Dissolve Knorr Minestrone Soup in 4 cups hot water as well as one fish stock cube. Remember, don't use more than one fish stock cube. Add to the pot along with the rice. Bring to a simmer, stir, and cook uncovered for 10–12 minutes until the rice is almost cooked. Stir occasionally. Nestle in the prawns (and other seafood if using). Simmer for another 5–8 minutes until prawns are pink and rice is tender. You want it brothy—not dry like pilaf, but not as wet as soup. Squeeze over lemon juice and scatter with chopped herbs.
