I love it when the nettles start to grow enough to be pickable again here at Holyford… (seem to coincide with the chiff-chaffs returning from Africa). Here’s my first nettle soup of the year. I had been soaking some almonds ready to go with the fried onions, garlic and carrots…picked a small bag of nettles and popped them in the blender with boiled water. Added the onions and carrots a desert spoon of bullion and rose harissa paste, 2t spoons of ground cumin and then a pack of chestnut and sage stuffing I had left over from Christmas… and whizzed it all up. My blender has a soup setting and some whole heats stuff up too. “Stonkingly good soup” said Jan, the owner here at Holyford.
