A Lekker Lamb Curry with Roti 1 kg lamb pieces 3 onions, sliced 2 tbs olive oil 2 tbs ghee 4 cardamom pods 4 cinnamon sticks 2 tbs finely grated/chopped garlic 1 tbs finely grated ginger 3 tbs roasted Masala 1 tbs leaf masala 1 tbs breyani masala 2 tbs Durban Masala Salt to taste 350g baby potatoes Fresh coriander, plus extra to serve Rotis/Rice In a pot, heat together the olive oil & ghee, to that add the onion, allow to soften then add in your ginger and garlic, allow to cook till fragrant. Add in the spices, and toast, allowing the onions to soften further and brown. Add in the meat and coat in the onions and spaces, give 5-10 minutes to cook. Add in two cups of boiling water and simmer for 30-40 minutes. Add in the potatoes and cook for further 25 minutes until the potatoes have softened. Remember to season as you go. You know the saying Easy Peasy Lemon Squeezy? Well it was written about this cake! Easy to make and simply delicious! 🤤 Lemon Cake with Condensed Milk Glaze

For the cake
375ml flour
10ml baking powder
Pinch, salt
125ml castor sugar
15ml lemon, zest
180ml plain yoghurt 125ml olive oil
2 eggs
5ml vanilla
Preheat the oven to 190°C and grease a loaf tin. Mix together the dry ingredients and in a separate bowl, whisk the sugar and lemon zest before adding the yoghurt, eggs, oil and vanilla. Add in the dry ingredients, being careful not to over mix. Bake for 30-40 minutes until a skewer inserted comes out clean.
For the lemon syrup
125ml lemon juice, freshly squeezed
125ml castor sugar
15ml lemon zest
While the cake bakes, make the lemon syrup - put all the ingredients into a saucepan and bring to the boil sugar should dissolve completely. Once the cake comes out of the oven, poke holes using a fork and pour the hot syrup oven the cake. Allow to cool down.
For the glaze
150ml condensed milk
45ml lemon juice
45ml lemon zest
Mix together the condensed milk and lemon juice and pour over the cake once cooled. Garnish with Lemon Zest.

Creamy Chicken & Corn Soup 1 Onion, finely chopped 2 Celery Stalks, finely chopped 4 Cloves of Garlic, finely chopped 400g Chicken Breast, cubed 1 tin of Cream Style Corn 4 cups Chicken Stock 50g Cream of Chicken Soup Powder 1/2 Cup Cremora Salt & Pepper to season Toasted Sourdough, to serve (optional) Heat some oil in a pan and lightly sauté the onion and celery, add in the garlic and chicken and season, fry until the chicken is lightly browned and then add the corn into the pot. Allow to cook while you mix together the chicken stock, soup mix and Cremora. Add to the pot and cook until thickened.
