To create our candied yams variation you’ll need silicone baking mats, half sheet pans, vegetable peeler, knife, circle cutters, small offset spatula, sweet potatoes, vegetable cooking spray, sugar and pumpkin spice mix. Follow video and bake in Oven set at 375 degrees Fahrenheit for 15mins, remove the top sheet pan and silicone baking mat, then bake an additional 10 minutes at 400 degrees Fahrenheit, then rotate pans and bake at 425 degrees Fahrenheit for 10 mins or until sugar appears is melted. For real, Merica and the potato chip, ELEVATED My favorite chip for this project is Wavy Lays Original, the ridges give you more of a pocket for the chocolate to reside in. Take the most be-au-ti-ful chips, dip one side, then vibrate your hand close to the surface to allow chocolate to pull off the chip, evenly coating it. Ideally you want to see the shape of the ridges. We used to sell them in a bag of 4 for 5 bucks! And that was back in the day… The hardest part is the chocolate temper so it’s a good thing I already made a video on that. SEEDING chocolate? 🤔🍫 To temper chocolate using the seeding method, start by melting two-thirds of the chocolate in a heatproof bowl over a pot of simmering water, stirring gently until it reaches about 120°F (46°C) for dark chocolate, or 115°F (43°C) for milk or white chocolate. Remove the bowl from heat and add the remaining one-third of chopped solid chocolate, stirring continuously until the chocolate cools to about 82-84 for white 86-88 for milk 88-90 for dark, then the added chocolate melts completely. Cool 2 degrees lower than what you need, then, reheat the mixture gently to around 88°F (31°C) for dark chocolate or 86°F (30°C) for milk and white chocolate. Mexican flan was something my grandma made for me as a kid and man do I crave it as an adult but I don’t want to pay the grocery store prices for it, looks like I’m making it from scratch. The ingredients are: Flan: - 1 can condensed milk - 1 can evaporated milk - 1/4 Cup whole milk - 1 1/2 Cup heavy cream - 10 yolks, - 2 vanilla beans - - Caramel - 1 cup of sugar - 1 cup of water - 1/4 cup + 2 tablespoons of water Cook one cup of sugar and one cup of water combined on a stove top until caramelized. This is known as the “wet caramel method”. Once sugar and water are cooked to the desired caramel color, add a quarter cup of water. If additional water is needed for consistency purposes, add 2 tablespoons at a time until consistency reaches thin, maple syrup like viscosity or resembling honey. Add all the ingredients and evenly mix together. Strain on top of tins that are filled with cooled caramel and place in the oven at 350° farenheit for 50 minutes or until jiggly. Allow to set overnight in the refrigerator and use a butter knife to cut around the tin before popping out onto a beautiful plate.
