Thayir Sadam! One of my all time favorite comfort foods. I'm using basmati here but it's not necessary since you'll be breaking down the grains when mixed into the yogurt anyway. In South India where yogurt rice is popular we don’t use basmati rice but Poni or other shorter grain white rice varieties. Any leftover white rice will do. Even jasmine is great. Use what you have. This recipe is also adaptable to how much rice you have left over, because you're simply using equal parts yogurt and equal parts rice, and then adjusting the spices and tadka accordingly. Whenever I’ve asked what recipes you guys would like to see, there are always a few of you asking how I make my Basmati rice. It is really very simple, but if you want to have elegant long grains that don’t stick together you must wash your rice well before it goes into the pot. The beauty of basmati is in its elegant long grain, and removing some of the starch with rinsing results in a beautiful fluffy rice that is perfect for pilafs or to be eaten plain with gravied curries and roasted meat and vegetables. It takes some time but it’s totally worth it!
