MARRY ME CHICKEN PASTA 🫶🏻 CHICKEN MARINADE - 500g chicken breast, or thigh - 2 tbsp olive oil - 1 tsp salt - 1/2 tsp black pepper - 1/2 tsp dried parsley - 1tsp paprika MARRY ME CHICKEN TORTELLINI - 1 shallot, diced small - 4-6 garlic cloves, minced - 1/4 cup sun dried tomatoes - 3 tbsp tomato paste - 1/2 tsp chili flakes (optional) - 1 cup reserved pasta water - 1 cup water (or use chicken broth) - 1 tbsp chicken broth powder (if not using broth) - 1 cup pure cream - 150g fresh spinach - 1/2 cup - 1 cup parmesan cheese - Fresh parsley, for garnish

ONE POT TACO RICE - 500g beef mince - 1 onion, diced - 4-6 garlic cloves, minced - 2tbsp tomato paste - 1 tsp dried coriander - 1 tsp cumin - 1 tsp smoked paprika - 1 tsp chipotle chilli powder - 1 can crushed tomato's - 1 cup rice, washed - 1 1/2 cups beef or chicken broth - S&P - 200g cheese of choice, i used havarti - Parsley - Fresh lime
- 1 onion - 2 - 3 carrots - Garlic (as much as you like) - 2 cups split red lentils - 1 tsp chilli flakes - 3 tsp oregano or marjoram - 2 tsp cumin - 1 tsp rosemary - 1/2 tsp turmeric - 8 cups chicken stock - Salt and pep to taste - 1 lemon, juiced
SHAKSHUKAAA 🍅🍳 #shakshuka #michaelfinch - 4 large eggs - 1 medium onion, diced - 1 red capsicum, diced - 5 garlic cloves, minced - 1 1/2tbsp harissa paste - 2tsp paprika - 1tsp cumin - 3 large roma tomatoes, chopped roughly (sub for 1 tin canned tomato) - 1/4 cup water - Salt and pepper to taste - Fresh parsley for garnish - Chilli oil, crumbled feta and avo (optional) Method: - Heat olive oil in pan on medium heat, add onion and capsicum salt and pep and cook for 5 mins. - Add garlic and harissa paste and cook for 2 minutes. - Add paprika, cumin, tomatoes and water, bring up to a simmer and allow the tomatoes to cook for around 5 mins or until broken down/jammy. - Use a large spoon to make holes for the eggs, put eggs in each hole and put the lid on the pan and cook for 5 mins on medium heat. Turn heat off as residual heat in pan and tomatoes will continue to cook your eggs! Garnish and enjoy x
