Honey cake (Medovik) recipe: Cake layers: - 3 Eggs - 3/4 cup sugar - 7 Tbsp salted butter - 4 Tbsp honey - 1 tsp baking soda - 3 1/2 cups flour Sour cream frosting: - 2 cups heavy cream - 2 cups powdered sugar - 1 teaspoon vanilla - 3 1/2 cups-4 cups sour cream 1. Mix eggs and sugar until frothy 2. add in butter and honey and mix over double boiler until butter is melted 3. Take off heat and add in baking soda 4. Add in flour 1 cup at a time while mixing. Dump dough out on floured surface and kneed in about 1/4 more cup of flour until it’s not sticky 5. Split into 14 pieces and roll out very thinly, keep scraps and bake (you will use it for decorating later) 6. use a 8 inch circle cake pan/ cutter or plate to cut out circles. Pierce with fork 7. Bake each cake layer for 3-5 minutes at 350 F (may need to adjust according to oven) 8. You can bake two cake layers at a time 9. Bake until golden brown 10. Let cake layers cool before frosting 11. In a mixer add in heavy whipping cream, vanilla and powdered sugar, mix until stiff peaks form. 12. Fold in sour cream 13. Frost generously. Use the leftover crumbs and put them into a plastic bag and run a rolling pin over it to finely crush then use it to decorate the cake 14. Decorate with fresh raspberries or strawberries (I also used chamomile flowers) 15.
