back to @iceculinary to attempt my final exam one more time! also brought back the original editing and caption style so hope you all enjoy. I was recreating a fish mosaic with a thai inspired green curry sauce and various garnishes. I really just winged this whole dish because I wanted to see how different cooking a similar dish one year apart from each other would be like. As the fish butcher at my restaurant right now I have handled so many different varieties and species of fish that breaking, filleting, and rolling the fish together went so much smoother and faster than when I first did it last year. Aside from that the biggest difference was definitely organization. I was able to collect my thoughts, make quick decisions, and stay very neat throughout the entire time, which I remember being a big struggle during my first exam. There are so many differences that I noticed and a lot of ways I could have improved even still. I think that is the beauty of cooking though, that no matter how good you think you get, you realize there is still so much more to improve on, learn about, and just experience. I had a really fun time coming here, and making this video because it reminded me a lot of my culinary school days. this is my chef (Leif Evans) @iceculinary grading my food for a practical exam i had just last week! this was our first exam where we got to choose what we got to cook from a few options and i made a pan seared chicken breast with a white wine pan sauce, glazed carrots, and fondant potatoes. i didn’t love my plating but i was still feeling pretty good about my plate. my chef didn’t have too much to say about my carrots and potatoes but i saw he wrote “nice” on the grade sheet which was a relief hahaha. pan sauce is always one of my favorites and it turned out really well, the chicken breast was well cooked, but barely under seasoned (as emphasized by my other chef, chef nin). i still did really well and this is the exam that marked the beginning of my last month or so in culinary school which is insane to think about. i really do appreciate all of you for joining me for this journey whenever you started watching, i am so grateful and excited to keep on learning and progressing together :D as always if you have any questions feel free to comment below or message me directly! #fyp #culinary #culinaryarts #culinaryschool #culinarystudent #culinaryexperience #chef #food #cook #cooking #grade #review #test #exam #pressure #nervous #teacher #student #pov #thoughts #FoodTok #cooktok
