A staple souring agent in Middle Eastern cuisine, these sundried limes impart concentrated tart citrus flavor that withstands long cook times, unlike their fresh counterparts. Don't mistake its black hue for dark heavy flavor- it's packed with notes of bright lime and floral meyer lemon that are grounded with quiet -but-funky fermented umami, musky woody earth, and a touch of pithy bitterness that disappears as you cook with it. A crushed or punctured whole lime could be used very much like how you'd use a tea bag: steep in your cooking liquid, squeeze to get every last drop, then removed before serving. This technique's perfect for: -simple syrups (try it with chamomile) -poaching liquids (especially delicate fish or seafood boils) -pilafs and other rice dishes (look up machboos recipes) -brothy soups (try it in matzoh ball soup) -hearty stews (Production Assistant Reem spoke of her family's ghormeh sabzi recipe that had Josh drooling) -making chai loomi, or lime tea (finished with fresh mint and honey) It can also be grated on a rasp for a finer powder that adds citrusy brightness to meat marinades/rubs, grilled vegetables, salad dressings, or even desserts! We're in Vietnam where they grow a lot of a spices and @JoshMamaclay is on a mission to try them! Today, he's trying star anise, straight off the tree. This plump 8-pointed star normally undergoes a days-long sun-drying process to become the rock-hard, woody spice use in our five spice, pho broth, masala chai, or mulled wine. But, when you have the chance to try it fresh, why wouldn't you?⁠ ⁠ Star anise contains the same flavor compound that give fennel and anise seed their characteristic licorice-y flavor. But where the dried seed pod is warm and floral, its fresh counterpart is tart and fruity. The first taste to greet you is a sharp sourness that's akin to a biting into a young green mango or an under-ripe stone fruit like peach or plum. The seeds within each point of the star are soft enough to bite through, which immediately retaliates with a highly tannic, grippy astringency, similar to what you taste in over-steeped tea. Luckily, these flavors are fleeting and give way to the natural sweetness the fruit has to offer. There's a brief moment of floral perfume, but that's quickly overcome by the bold licorice flavor we've come to associate with the spice.⁠ ⁠ Asking the farmers if the raw star anise pod is used for anything only garnered nervous chuckles and head shaking, but Josh thinks it could be simmered into jam along with other fruits that grow in the area like mango, pomelo, and guava. Perhaps it can be thinly sliced and tossed with green mango slivers, scallions, fish sauce, and lime juice for an aromatic take on Thai green papaya salad...
